Five Fun Facts on Friday

1. Green peppers have more vitamin C than an orange has.

2. Pigs are actually clean creatures they only like the mud because it cools their body down.
3. God created the world in ONLY 7 days (which I find quite amazing!)


4. The US Postal rates is once again going up on May 11- (no worries though it is not affecting the 1 ounce standard envelope that still stays at .42 only items that weigh more)

Thrilling Thursday

Today is going to be a very BUSY day between meetings and such. I have 2 insurance meetings to go to this morning and then this afternoon I have stacks of paper to work on.
Day 4 of Administrative Professional week- the girls will get pizza today since I will not be at the office to cook anything. I think that Pizza is a treat they do not mind getting!
I am so glad that it is almost Friday- this week has been a good one but a long one so I am anxiously looking forward to the weekend.

Tasty Tuesday

Today- day 2 of professional administrative appreciation week I made an Amish Dairy Casserole and a Broccoli Cauliflower salad.

I told the girls that I was going to try a recipe out of my Amish Book.

Here is the recipe for the casserole... it does look yummy!


8 cups of shredded raw potatoes
2 cups uncooked macaroni
2 cups fresh or frozen peas
2 cups cooked ground beef
3 teaspoons of salt
1/2 cup chopped onion
4 cups of shredded cheese
2 quarts of milk


Preheat oven to 325. Layer ingredients in large baking dish in order given and pour milk over all. Bake for 2 1/2 hours. Yields 15 servings.



Does that not sound YUMMY?


I was perplexed at the combination of ingredients- potatoes and macaroni- When discussing this recipe with my mom she made a good point that the Amish work hard so they eat hardy meals.
This made total sense to me!

Madness Monday

What a day! let me just say Thank you Lord that is is over!
I had a rough weekend...
I spent Saturday baking banana bread for the office girls. This week is professional administrative appreciation week. So for the first day I gave them each a loaf of homemade banana bread and lunch. Lunch consisted of a tray of lunch meats with 3 different types of meat and a cheese tray with 3 different types of cheese. Also, I made a chicken salad, a relish tray, a vegetable tray and chips.
I got a little flu bug so I was not feeling the best on Sunday. I spent most of the day in bed resting and visiting the restroom.
Today work was rough. The highlight of the day was lunch. We all enjoyed the sandwiches (made with croissants) and Eydie brought a watermelon for everyone.
Paul has been busy with work, he has a new system that was installed last week and he has had nothing but problems with it. I felt bad for him since I got bombarded with phone calls all weekend, and to top it off he has a research paper due on Wednesday. He has done lots of research but now the hard part is to put all his research on paper. He is feeling the stress of school as well.
I am now watching my favorite NCIS and resting.... My mind needs to wind down from the day at work!

Thank you Lord


I just want to take this time to say THANK YOU Lord for a wonderful husband. Today is "national appreciate your husband day". This is the first time I have ever heard of this but today I heard on the radio about the event.
I made a big deal for Paul to know that I truly appreciate him.
But most importantly I wanted to say THANK YOU LORD for Paul Daniel Goossen-
Here are some facts of my wonderful husband:
Born on December 2, 1975 in Buenos Aires Argentina.
Paul is a very loving husband.
Paul is loyal, faithful and very caring.
Paul is hardworking.
But most importantly- Paul loves the LORD- which has made him the man he is.

Weigh In Time

Sunday is always my weigh in day. The week that I was in Pennsylvania I went up 3 lbs- but I refused to get discouraged... It is just hard to follow exactly the weight watchers plan when you eat out and travel. So last week I had to get back on track. I was so happy on Sunday when I weighed myself and I had lost the 3 I gained plus another pound. I am at 14lbs lost.
The best part is that I can feel it in some of my clothes. They feel not as snug.
Easter was good. Paul and I had a very low key day. Holidays are somewhat hard for me because I love to be with family- So this day I decided that I was not going to let it upset me- and I succeeded! I had a wonderful time with Paul. We spent time together just relaxing. I was good.

Oh How I love Coffee


Last week while traveling I indulged and drank lots of coffee. I was doing really well before the trip with a coffee free diet... Now I am struggling with my days without coffee. I have been counting my points for weight watchers and I have made the decision that 3 points for a dunkin donuts small coffee is well worth it!- So this morning my wonderful husband woke up earlier than normal so that we could go to dunkin donuts to pick up a coffee- Just the smell of the coffee makes me smile! I will savor this cup of coffee all morning!

I am ever so thankful that I finally got through my stacks of papers piled up from the time I was gone. Now I can concentrate on getting new business.

GOD IS GOOD ALL THE TIME- ALL THE TIME GOD IS GOOD!

Prayers deperately needed~

*** Prayers***** Prayers***** and more Prayers ****

This economy is really affecting the people around me. I am SO THANKFUL that God has protected us with our jobs but the following people need your prayers:

-} Ana Munguia- her husband has one week of work left and they are not sure what the future holds for them.

-} Elizabeth Houston- her husband has been laid off effective 04/08/09 due to the poor economy. Pray that he will find a new job soon.

-} A friend from Book club who is going through a divorce. There are children involved and things are complicated for her. I am praying for her since she is not saved so first and foremost her salvation is my priority but I do pray for those 2 dear children that will be affected permanently by this divorce.

-} Pray for my aunt to find the right job- she has been on the look for a job.

I want to make sure that you know I am THANKFUL for things so I praise God for the following:

-} Steady employment for both Paul and I.

-} For a wonderful Husband who loves me unconditionally when others fail to love me that way!

-} For a wonderful group to work with- I have really been blessed with Hardworking employees who make my life so much easier at work!

-} For saved parents who have been EXCELLENT examples to me!- Thank you Dad and Mom!

-} For my siblings- After the trip I made last week- I was reminded of what a blessing it is to have brothers and sisters that are there for me no matter what. I have seen so many dysfunctional families lately that it is a TRUE blessing to have the siblings I have!

All good things must come to an end


We girls had a fabulous trip. But like everything in life- all good things must come to an end. Tomorrow I go home to my sweet husband. I know he had a rough week while I was gone so I am sure he is anxious to get me home.
A brief summary of our trip to Pennsylvania-

Monday we arrived in PA exhausted but happy to see everyone. Spent most of that day just relaxing.

Tuesday we spent the day in Lancaster PA. What a beautiful day. We went to an Amish bake shop- "Bird in Hand Bakery" We bought a Shoofly pie and shared it among the four of us. It was really YUMMY. The bakery was amazing. fresh baked bread, cookies, cakes, pies, muffins and many other yummy foods. We drove around various Amish towns and looked at craft stores and such. I really enjoyed doing this and it reminded me of the Amish stories I have read. It brought to life all the books I have read throughout the years.


Wednesday and Thursday was class day- and playing cards together. Nothing really eventful these days!
Friday we started our trip back to South Carolina. The drive was HORRIBLE. It was raining so bad I could barely see the cars in front of me. This made for a long and exhausting trip. We stopped in North Carolina- there was NO way I was driving anymore so a good rest was needed.

Today- we arrived and did some more relaxing- I gave Aunt Judy, Lizzie and Michael a facial (which I hope they enjoyed!)

Now I am watching Slumdog Millionaire with my whole family in Michael's man room-
