Liberty University

Paul registered for Fall classes and when we sat down to evaluate his status we were overjoyed to see that he only has 10 classes left after the fall term. WHAT excitement!
He has been working diligently on classes for a year now- not taking a break even in the summer!
We finally see the end of the tunnel. The way we have it planned is taking 4 classes in Spring 2010 (two classes term A and two classes term B), 3 classes for Summer 2010 and 4 classes for Fall 2010! This would mean that he finishes in 2010! Of course he would not "walk" until 2011- but he will be done in a little over a year! We are both very excited about this! We plan on taking a week vacation to go to Virginia to have him WALK to receive his diploma!

Lake Mohave

This past week Paul bought a canoe. He has been saving for a few months to buy one. He found a great deal on Craigs list. So, we woke up early today and loaded the car with water, life vests and the canoe. Lake Mohave is 45 minutes away so we planned on making a day of it.

Here is Paul tying down the canoe to the car. Its 8:00 am and already 90 degrees outside. Ugh~!

Next, we went to New Day Cafe for a good breakfast of eggs, sausage, pancakes and coffee.

We arrive at the lake and it is already packed with many people. I have to say the water looked nice. I got in the canoe with Paul and lasted 2 minutes- We managed to tip the canoe. I felt 3 sensations all at once... 1. scared- I could not feel the bottom so it kind of freaked me out- even though I know how to swim. 2. embarrassed- we had so many people watching us. 3. sick- I managed to swallow lots of water which gave me a sick feeling. Two nice guys swam over and helped us get the canoe back the right way. I quickly gave up. I told Paul to go ahead and take the canoe out without me that I would sit and watch.

Paul took it out for about 30 minutes- then he came back to shore since he felt guilty leaving me at the shore alone.
It was an interesting adventure. Wanting a whole day adventure turned out to be only a few hour adventure.
I am home now... and glad to be home. Paul is taking a nap... I think I will join him.

Fathers Day Retreat













Paul surprised me this weekend and said that I needed a retreat! So- he packed me up and drove me to California for the weekend. Thanks to my brother Philip, we now use Priceline for booking of hotels- so we got a room for $30.00 a night and it was a 4 star hotel.
So, we spent Saturday relaxing, and recuperating from my wicked cold. Paul did most of his homework on Saturday. Then Sunday we woke up (I felt quite refreshed) and we started our drive home. On the way home we saw a sign for a winery, Paul wanting to check it out made the detour. It was a quaint little place. Not a huge winery. We looked around and then left. They did not have any tours available on Sunday. Paul has grape vines in our back yard and in all honesty our grape vines looked better than the ones that we saw at this winery. However, it was a nice stop where we could stretch our legs and walk a bit before sitting for another few hours.
I feel like a completely different person this morning. I am rested, I can breathe clearly and I feel GREAT. I think sometimes the body just needs to stop and REST.

Anniversary day, sick days

Monday was our 11th Anniversary! We went to dinner to an AWESOME restaurant. When we ordered dessert it came out on a decorated plate stating Happy Anniversary. (see pictures below).
Tuesday I wake up with a sore throat and a cough.... UGH!!!
I went to work 1/2 day and then went home... could not handle the way I felt!
Wednesday- basically stayed in bed all day- not doing too well. Today I managed to get out of bed however- still sluggish.... not feeling all that well so I think I am going to make it a 1/2 day.

Empanadas

Last night I tried something new- I always make empanadas with meat or ham and cheese- This time I decided to try making some of spinach empanadas.

First I fried up some onions with a little bit of EVOO (extra virgin olive oil). While the onions were cooking I boiled the spinach.
Once the spinach was cooked I drained it and added it to the onions. I put about a cup of grated Romano cheese, salt, pepper and 2 hard boiled eggs. I mixed this all together- and TADA- there is the filling for the empanada.

As our 11th anniversary approaches I am still not quite sure what to do for Paul- I know Paul would love to go camping- but we both decided to wait until our friend from Argentina comes to visit (she arrives on July 19th) to go camping at the Grand Canyon.

Any suggestions on what I can do for Paul- something unique - something fun????

Where did the weekend go?

I blinked and it was Monday again! Where did my weekend go?
Saturday we had a car appointment to get the oil changed and the brakes changed- We arrived at the dealership at 7:30 am- signed in and they drove the car away. 4 hours later - did you hear me- 4 hours later they brought the car out done!!!! We were beside ourselves- Since when does an oil change and brake change take 4 hours? I was politely told that the work being done was under warranty- so what is that supposed to mean? Does that mean since I wont be paying anything for the services provided they can just take their grand old time????
From there we went to Rincon de Buenos Aires (an argentine restaurant) to eat lunch and watch the game Argentina vs Columbia. We spent 3 hours at the restaurant- good thing Argentina won!
From there we went to visit Pastor Mario and Gabby Alsina- Good news for them! They got their residency card! We have been praying for this for them for over a year now! We had good time of fellowship and dinner with them. Their dogs had puppies again- 5 of them! we played with them for a little while and also just spent sometime on the Word of God. What a blessing to have fellowship with believers. We left at 10:30 pm.
Sunday morning came quickly! Church at 9:00 am and then home to work on Lunch- we invited friends over for lunch- We spent time with them in fellowship most of the day!

It's Friday!

What a blessing that it is Friday! I have had an exhausting week- catching up on all my paperwork from my vacation was draining! I am actually seeing the end of the piles- HOORAY!

Last night was book club- we had a great meeting with the girls. We met at THE GRAPE. I did not know anything about the place- It is like a tapas place with small dishes. I think it is more like a meeting place for people. I probably would not go there again- but I did enjoy the time with the girls. The funny part is that Paul and Michael (since Michael is visiting from South Carolina) showed up there too. The girls from Book Club thought it was funny. I think they wanted to join the group but since it is an ALL girls group they opted for sitting at a table near us. Paul would venture over to our table periodically. The girls enjoy Paul very much- they think he is a funny guy- Even one of the girls commented on how lucky I am to be married to him-which I ABSOLUTELY agree with- I am truly blessed to be married to a God fearing man, who loves me with NO conditions.

Today while listening to the music that I listen to every day- I heard the song "Indescribable" by Chris Tomlin.
I decided to look up the lyrics since for the first time I actually tried to listen to the lyrics.
They are as follows:

One of my dear friends sent me an e-mail today that I want to share-
A teacher asked her students to write anything they wanted to know or anything they wanted to ask God and to put it in the comment box.

Come Thou Fount

While sitting at my desk I always listen to music- Today the hymn "Come Thou Fount of Every Blessing" was on and it gave me such a peace to listen to it!

Come, thou Fount of every blessing, tune my heart to sing thy grace; streams of mercy, never ceasing, call for songs of loudest praise. Teach me some melodious sonnet, sung by flaming tongues above. Praise the mount! I'm fixed upon it, mount of thy redeeming love.

A week to remember...

What a week. First let me start off by saying how Thankful I am to be HOME. Don't get me wrong... I really enjoyed myself in Indiana with Lizzie and the activities we did while there.... but you know that saying "Absence makes the heart grow fonder" truly applied to me. I was so HAPPY to see Paul again!


Here we are Lizzie and I enjoying a meal together at Chilis. The first few days in Indiana we just did girly things.... We got a pedicure, nails done, eyebrows waxed and shopping.
On Tuesday we drove to Indianapolis and picked up dad from the airport and took him to Grandma and Grandpas House.

We spent the day with Grandma and Grandpa- Lizzie and I making dinner for the family- giving Grandma a break. We made milanesas, mashed potatoes, green beans, honey glazed carrots, a cake, (Tina brought up a Yummy salad to share since she had leftovers from a picnic from the day before) and french bread. It was really good (or at least I thought so). We had 10 people with us. It was good to see everyone.

Uncle Mike and Aunt Rita were able to make it out to visit with us as well. It was Uncle Mikes birthday so we made sure to Sing Happy Birthday to him.

Of course Uncle Allan and Aunt Sharon were able to make it to... I made sure we had plenty of french bread since I know how much Aunt Sharon loves bread!




Wednesday we did some laundry at this quaint laundry place. The machines were ancient and it made me very thankful that I have a machine at home and do not need to go anywhere to do laundry.

Thursday was the rehearsal and rehearsal dinner.

Friday, was the actual wedding day and it was filled with MUCH activity.

We got our hair done, makeup done and ran to the "Embassy" (an old theatre in Fort Wayne) to get ready for the actual ceremony.
