Empanadas

Last night I tried something new- I always make empanadas with meat or ham and cheese- This time I decided to try making some of spinach empanadas.

First I fried up some onions with a little bit of EVOO (extra virgin olive oil). While the onions were cooking I boiled the spinach.
Once the spinach was cooked I drained it and added it to the onions. I put about a cup of grated Romano cheese, salt, pepper and 2 hard boiled eggs. I mixed this all together- and TADA- there is the filling for the empanada.

As our 11th anniversary approaches I am still not quite sure what to do for Paul- I know Paul would love to go camping- but we both decided to wait until our friend from Argentina comes to visit (she arrives on July 19th) to go camping at the Grand Canyon.

Any suggestions on what I can do for Paul- something unique - something fun????

those empanadas sound delicious... how did they taste? would you make them again?
Is there a park or something around your area that you can go and ride bikes or walk a trail or something like that? You could pack a nice fancy picnic and enjoy the park!
